Yummy Ecuadorian Meal

I've been wanting to make a favorite of mine for a long time. My mission-mom gave me a Patacones maker on my last visit (too many years ago, now) and I've made patacones, maybe, three times total! Sad, really. 

So, I found the perfect plantains...perfectly green, very little yellow. They turned out as good as I remembered them. So delicious!

I made them with one of my favorite (and easiest, cheapest) meals ever: eggs and rice.

When peeling the plantains, do not let the peels touch your clothing and don't wipe your hands on your clothes...they will stain.

Slice the plantains into 1 inch slices

Fry the pieces until just barely golden yellow.

Smash/flatten each piece slightly. I used the Patacones maker, but a mason jar is perfect for this task.

Continue frying the pieces until the they are nice and crispy golden brown, maybe slightly over.

Sprinkle salt (I use sea salt) on top and eat plain. So delicious!!
